The Peas are among the world’s oldest crops. Peas belong to the family of cool season legume crops commonly reffered to as pulses, which includes lentils, faba beans, beans and chikpeas. The peas are native to Middle East and has been cultivated in Europe for several thousand years. It is now grown in all climatic zones including the tropics where it is grown at high elevations. Peas are usually boiled or steamed, which beaks down the cell walls, improving flavor and nutrient availability. Peas are also Canada’s largest pulse crop, grown over a large geographic area, including significant portions of the provinces of Manitoba, Saskatchewan and Alberta.

Yellow Peas is known as Lappeh in western Asia and particularly in Iran. In North India, they are generally known as Matar Ki Daal. Yellow Peas are most often used to prepare Dal in Guyana, Suriname, Mauritius, South Africa, Trinidad and Tobago, Jamaica and Fiji. Referred to as simply dal, it is prepared similarly to dals found in India, but also may be used in a variety of other recipes. Moroccan Berber cuisine has “tamaraqt” or yellow split pea soup with olive oil and cumin added.

Chickpeas (also know as Garbanzo Beans) are beige-colored, pea-shaped legumes, which are very popular in the Mediterranean, Middle East and South Asia. They have a mild nutty taste and can be a great substitue for meat. They are also good source of fiber, protein and folate. The plant grows to between 20-50 cm high and has small feathery leaves on either side of the stem. Chickpeas are a type of pulse, with one seedpod containing two or three peas. India, Mexico, Canada, USA and Argentina are the main producers of chickpeas. However, most of the production in India is used for domestic consumption, thus the other origins are the main suppliers of export quality chickpeas.

Corn has become a staple food in many parts of the world, with the total production of corn surpassing that of wheat or rice. However, little of this corn is consumed directly by humans: most is used for corn ethanol, animal feed and other corn products, such as corn starch and corn syrup. The six major types of corn are dent corn, flint corn, pod corn, popcorn, flour corn, and sweet corn. Sugar-rich varieties called sweet corn are usually grown for human consumption as kernels, while field corn varieties are used for animal feed, various corn-based human food uses (including grinding into cornmeal or masa, pressing into corn oil, and fermentation and distillation into alcoholic beverages like bourbon whiskey), and as chemical feedstocks. Corn is also used in making ethanol and other biofuels.
